Hot Honey Sheet Pan Chicken

Six to eight bone-in thighs, potatoes, green beans, sticky hot honey. One pan. About twenty bucks.

Spooning hot honey over a roasted chicken thigh with potatoes, green beans, and lemon

Instructions

  1. Heat the oven

    Heat oven to 425°F.

  2. Start the potatoes

    Cut the potatoes into bite-size wedges. Sheet pan. 1 Tbsp oil. Sunday Best. Toss. Into the oven 10 minutes. Head start only.

  3. Add the chicken

    Pat 6 to 8 bone-in, skin-on thighs dry. Nestle them in with the potatoes. More oil. More Sunday Best. Back in. Cook by temperature, not the clock. Bone-in usually needs a good while.

  4. Make the hot honey

    Grate 4 garlic cloves into a bowl. ⅓ cup honey. 2 to 3 Tbsp hot sauce. 1 Tbsp apple cider vinegar. Stir. Taste.

  5. Prep the beans

    Wash the green beans. Oil. Salt. Toss. Hold.

  6. Glaze and add the beans

    When the thighs read about 165°F, pull the pan. Spoon hot honey on the chicken only. Save extra for dipping. Nestle the beans in the gaps. Last trip in the oven.

  7. Finish and rest

    Pull when the thighs read 185–190°F. Rest 5–10 minutes. Extra honey on the plate.

Honey burns if it rides the whole cook

That is why it goes on late. Potatoes get about 10 minutes alone. Thighs ride to about 165°F — call it 30 minutes on this cook — then the glaze and the beans go on. Last 10–15 minutes, pull at 185–190°F.

The jar on the shelf

Mike’s Hot Honey off the shelf is the shortcut said on camera. Same job as the bowl: honey, heat, a little acid. Make it if you have the four ingredients. Buy it if you don’t.

Chile honey is older than the bottle

Honey and chile have been getting together a long time — Southern and Caribbean cooking both know the move. What is relatively modern is the grocery bottle. In 2003 Mike Kurtz tasted chile-infused honey on pizza in Brazil, came home, and started making his own. Around 2010 he brought it into Paulie Gee’s in Brooklyn. They put it on a soppressata pie. America saw a bottle of honey with a little attitude and said, we need that.
