Texas Kolaches

One dough. Four fillings. Sausage, bacon-egg-cheese, biscuits and gravy, and the open-faced apple that still looks legal in Prague. Grams are the recipe. Cups are a backup guess.

Instructions

  1. Mix and knead

    Warm the milk. Cool the melted butter until a finger can sit in it. Beat the eggs. Stir milk, sugar, yeast, butter, eggs, and salt. Add 450 g flour. If it is still a batter after a minute, add the last 50 g. Knead 8–10 minutes. Soft and slightly tacky is done. Do not keep dumping flour. High humidity does not change the grams — it changes how fast you add the last 50 g.

  2. Rise and divide

    Greased 4 qt bowl, top oiled, cover. Doubled in 60–90 minutes. Poke it — if the dent stays, divide: ~320 g sausage (6–8), 250 g bacon-egg-cheese (4), 225 g gravy (4), 225 g apple (4). Extra dough keeps 3 days in the fridge, top oiled and wrapped.

  3. Houston sausage klobasnek

    Wendel Montgomery wrapped sausage in kolache dough in West, Texas, and called it a klobasnek. Houston put it in a doughnut case and called both things kolache. Flatten ovals, hug the link, cheese and jalapeño if you want, pinch hard, seam down. Rise 30–45 min. Bake 375°F, 18–22 min. Butter the tops.

  4. Bacon, egg, and cheese

    Cheese first (glue), then fully cooled egg, then bacon. Hot eggs steam the seam open. Pinch hard, seam down, rise 40–60, bake 375°F 18–22, butter the tops. Ranchero + pepper jack on 1 or 2 is fine if the salsa is thick and cold. Wet salsa leaks.

  5. Biscuits and gravy

    Gravy in the sausage skillet: drippings, 2 Tbsp flour, 1 cup milk, pepper, salt, pinch of Sunday Best. It must mound on a spoon. Chill until it scoops. Two tablespoons cold filling per oval. Pinch like a dumpling. Warm gravy in raw dough is a disaster. Rise 40–60, bake 375°F 18–22, butter the tops. A leak is a sample piece.

  6. Apple cinnamon — open-faced

    This is the one that still looks like a Czech koláč. Cook apples jammy with a tiny bite, stir in 1 tsp flour, cool. Rounds with a well, not wrapped ovals. No volcanoes. Scatter posypka. Rise until the rims puff, 40–60 min. Bake 375°F 16–20. Butter only the rims. Cool 10 min. Glaze from high — do not flood the well.

Nutrition is an estimate per piece, not lab work. Sausage assumes a 4–5 inch smoked link: about 380 cal. Bacon-egg-cheese ~360. Gravy ~410. Apple with modest glaze ~340.
