No-Bake Strawberry Cheesecake Icebox Pie

Light, mostly sugar-free no-bake cheesecake pie loaded with fresh strawberries, cherries, dark chocolate, and lime zest. No oven needed.

No-bake strawberry cheesecake icebox pie topped with sliced strawberries, whole cherries, shaved dark chocolate, and lime zest

Instructions

  1. Beat the cream cheese

    Beat the cream cheese until it’s completely smooth — no lumps left behind.

  2. Whisk the pudding

    Whisk the pudding mix into the cold milk for a couple minutes until it starts thickening up.

  3. Combine

    Pour the pudding into the cream cheese and blend until everything is smooth.

  4. Fold in Cool Whip

    Gently fold in the Cool Whip so you keep all that airy lightness.

  5. Fill the crust

    Spread the filling into the crust and smooth out the top.

  6. Chill overnight

    Stick it in the fridge overnight (or at least 3–4 hours if you’re impatient).

  7. Arrange the strawberries

    Lay the sliced strawberries across the top, about a quarter-inch apart so they don’t overlap.

  8. Zest the chocolate

    Zest the dark chocolate over roughly two-thirds of the pie.

  9. Zest the lime

    Zest the lime over the last third, letting it overlap a little into the chocolate.

  10. Pipe the Reddi Whip

    Pipe or dollop Reddi Whip around the edge — six short squirts does the job.

  11. Top with cherries

    Park the six whole cherries around the border.

  12. Slice and serve

    Slice it up and serve cold.

Icebox pie history

These no-bake “icebox” pies got their name from the actual iceboxes people used before electric refrigerators became common in the 1930s–40s. The style really took off in the 1950s once cream cheese, instant pudding, and Cool Whip were in every grocery store. This version (fat-free cream cheese + sugar-free pudding + real fruit + dark chocolate + lime) is basically the modern lightened-up descendant of those mid-century refrigerator pies — just with better toppings and zero oven required.
