Crock Pot Cream Cheese Chicken Chili

Instructions

  1. Load the pot

    Add the drained black beans, frozen peas, corn, diced tomatoes with green chilies, chicken broth, and 2 Tbsp Holy Street Taco Seasoning to the crock pot. Give it a stir so the seasoning is distributed. Nestle the chicken on top — no need to cut it up first.

  2. Cook low and slow (or high and faster)

    Cover and cook on low 6–7 hours or high 3–4 hours. The chicken is done when it shreds with almost no resistance. If you drop in a whole jalapeño or habanero for heat, leave it whole so you can fish it out later — or dice it if you want the heat fully distributed.

  3. Shred the chicken

    Pull the chicken out onto a cutting board or plate, shred it with two forks (or the beaters of a hand mixer if you’re in a hurry), and return every last bit to the pot. Stir it back into the beans and corn.

  4. Melt the cream cheese

    Cube the block of cream cheese and drop the cubes into the pot. Stir, then let it cook on low another 20–30 minutes. The cream cheese will melt into the broth and turn the whole pot thick, rich, and creamy — no flour, no cornstarch, no heavy cream required.

  5. Serve

    Ladle into bowls. Top with shredded cheese, a dollop of sour cream, a scatter of cilantro, and a handful of tortilla chips for crunch. The chips soften into the chili as you eat — pure comfort.

Why cream cheese works here

  • No roux, no slurry. Cubed cream cheese melts into the hot liquid and emulsifies, thickening the chili and giving it body without the floury taste of a traditional white sauce.
  • Budget and pantry friendly. One 8 oz block does the job of a cup of heavy cream and then some, and it keeps in the fridge for weeks.
  • Modern twist on white chicken chili. White chicken chili took off in the 1980s–90s as a milder, creamier cousin to Texas-style red chili. Adding cream cheese is a popular dump-and-go evolution from the early 2000s crock-pot boom — the same idea as those viral “cream cheese chicken” recipes, just fully chili-fied with beans, corn, and tomatoes.

Make it your own

  • Heat level: The Holy Street Taco Seasoning already brings a gentle kick. For more fire, drop in a whole habanero or a diced jalapeño with the dump. Fish the whole pepper out before serving if you want the aroma without the full burn.
  • Thighs vs breasts: Thighs stay juicier over the long cook and shred beautifully. Breasts work fine and are leaner — just don’t cook them past the shred point or they can dry out.
  • No frozen peas? Leave them out or swap in an extra can of corn or a handful of frozen edamame. The peas add a little sweetness and color; they’re not load-bearing.
  • Dairy-free path: A dairy-free cream cheese works, or finish with a can of full-fat coconut milk stirred in at the end for a different (still creamy) vibe.

A little history in the bowl

  • Chili itself is a Texas legend with Mexican roots — the classic version is meat and chiles, beans optional and still debated in competition circles. White chicken chili showed up later as a weeknight-friendly, milder alternative that leaned on beans, corn, and green chiles.
  • The cream-cheese version is pure American crock-pot ingenuity. Once slow cookers became standard kitchen equipment in the 1970s and the internet started sharing “dump recipes” in the 2000s, people discovered that a block of cream cheese could turn a thin broth into something spoon-coating and rich with almost no extra work.
