Put 1 pound 80/20 in a bowl. Season with Sunday Best (or salt, pepper, cumin). Mix just until the seasoning disappears. Do not overwork the meat. Divide into 5 or 6 loose balls.
Shred 8 ounces Monterey Jack from the block. Thinly slice 1/2 yellow onion.
Heat a dry blackstone or cast-iron until hot. No oil. Beef ball on. Small pile of onion on top of the beef. Flour tortilla on top of everything. Smash hard until the beef and onion weld to the tortilla, meat-side down. 2–3 minutes until the edges lace.
Flip. Tortilla down, crust up. Jack on the beef. Splash of water beside the taco. Lid 20–30 seconds.
Fold. Pull. Eat.
It steams into the beef while you smash, then it sugars onto the steel. That is the Oklahoma fried-onion burger move from El Reno in the 1920s — beef smashed over raw onion because onion was cheap and hamburger needed help. The tortilla just stole the bun’s parking spot.
Diners have been flattening balls of beef on a rippling griddle for a century. Smashburger put a brand on it in Denver in 2007. The taco version ran the internet in the early 2020s because a flour tortilla is already a lid, already a spatula, and already dinner. You are not inventing the wheel. You are welding it to a tortilla.

Ballpark from 1 lb 80/20, 6 tortillas, 8 oz Jack, and half an onion — not lab-tested. Five bigger tacos changes the math.
